FAQs answered

Why is my scoopable cheesecake too soft?

It probably needs more chill time. Refrigerate for at least 6 hours, but overnight gives you the best scoopable texture. Be sure to use full-fat brick-style cream cheese and whip the heavy cream to firm peaks.

Can I make scoopable cheesecake in a 9×13-inch pan?

Yes. The cheesecake will be thinner than when made in a 9×9-inch pan, so keep that in mind when chilling and serving.

How do I get pretty caramel swirls in the cheesecake?

Use caramel that’s cool but still pourable. Drizzle it over the filling and gently swirl with a knife. If the caramel is too warm, it can blend into the filling instead of leaving those pretty ribbons.

  • ¼ teaspoon salt
  • 16 ounces cream cheese, softened to room temperature

  • ½ cup salted caramel sauce, plus more for serving
  • 1 cup heavy whipping cream, cold
  • 2 tablespoons powdered sugar
  • ½ cup salted caramel sauce
  • Flaky sea salt, for sprinkling
  • Whipped cream, optional
  • Extra graham cracker crumbs, optional

Instructions

  1. Make the crust.
Combine graham cracker crumbs, melted butter, sugar, and salt. Press firmly into a 9×9-inch baking dish and refrigerate while preparing the filling. Line the pan with parchment first, if desired.

Spread half the filling over the crust. Drizzle with 4 tablespoons caramel and gently swirl with a knife or skewer. Add the remaining filling, smooth the top, then drizzle with the remaining caramel and swirl again.
  4. Chill.
Cover and refrigerate for at least 6 hours, preferably overnight.
  5. Finish and serve.
Sprinkle with flaky sea salt and scoop into bowls or dessert glasses. Add whipped cream, extra caramel, or graham cracker crumbs, if desired.
